Fish Tacos

I love love love fish tacos for two reasons mostly.  First and foremost they are delicious, secondly I can order them at mexican restaurants (read tex mex) and not feel like I just ate my weight in cheese.  It's a win win really.

I attempted to make my beloved dish last night and let's just say there is room for improvement.  It was pretty bland, and Steven and I finally decided it was because this particular recipe didn't call for mango-salsa topping...a staple to say the least.  We definitely wont me making that mistake again.  

Tilapia, avocado with lime juice, and cole slaw with spicy chipotle thousand island


sided with margaritas and bush's baked beans...(because I forgot to buy charro... oh well)
